Midwest Caviar LLC located in Crawford County Indiana, has been in the caviar business since 1999,  family owned and operated. Owned by David and Vicki Cox and son David Jr.

 

Midwest Caviar operates two boats and two crews daily starting November 1st  and ending April 30. Midwest Caviar is F.D.A. Certified. Captains of both boats hold commercial fishing licenses in both Kentucky and Indiana, along with a harvesters license and  roe buyers license.

For the past few years MIDWEST CAVIAR has caught half of the harvest reported being caught in Kentucky and Indiana.

Our caviar is served on some of the finest cruise boats, and in some of the finest restaurants from the East Coast to the West Coast our caviar is exported to Germany, Russia and Brazil.

(Polyodon Spathula) - Commonly known as "Spoonbills or Paddlefish" are a cartilaginous cousin to sturgeons and yield roe ranging in color from pale through dark steel grey and golden "osetra brown" and resembles Russian Sevruga Caviar. The Paddlefish found in the rivers of Tennessee, Alabama, Missouri,Indiana and Kentucky.

You don't have to spend a fortune to enjoy quality gourmet caviar, American caviar prices are more reasonable than those of importers, and this, coupled with some very unique flavors makes for an excellent appetizer.
